1-2 large tomatoes, cut into wedges
1 medium red onion, sliced and separated into rings, optional

¼ cup sugar
1 cup water
¼ cup oil
Sea salt and fresh ground pepper
Combine ingredients in a large bowl and mix well. Refrigerate at least 2 hours before serving so the flavors have a chance to blend.
