Such a quick, easy recipe for a seasonal dessert; can be a great breakfast treat for those with a sweet tooth! Use an apple that is best for baking such as:

Jonathans and Jonagolds, Honeycrisp, Granny Smith, Melrose, Winesap, Braeburn, Rome Beauty.

  • Serves: 8
  • 4 cups sliced or diced apples
  • 1 tablespoon flour
  • ½ cup sugar
  • ¾ cup brown sugar
  • ⅓ cup butter
  • ¾ cup oatmeal
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

Preheat oven to 350°. Combine the first three ingredients and place in a greased 8×8 baking dish.

Combine the remaining ingredients and sprinkle over the top of the apple mixture.

Bake 30 minutes. Serve warm

The secret to great roasted brussels sprouts is to lightly blanch them in salted water for a few minutes before roasting. They can be blanched up to a day ahead of time and roasted at the last minute.

  • 1 pound baby Brussels sprouts – shaved or halved
  • 2 tablespoons olive oil
  • 6 tablespoons balsamic vinegar
  • Sea salt and freshly ground black pepper
  • 3 slices Applewood smoked bacon, cooked crisp
  • 3 Tablespoons sliced almonds, toasted
  • 1 dab unsalted butter, optional

Preheat oven to 400°.

Blanch brussels sprouts in boiling, salted water, drain and plunge into an ice water bath. Drain and dry.

Mix brussels sprouts with olive oil and vinegar, spread on a baking sheet lined with foil or parchment paper. Season with a sprinkling of sea salt and fresh ground pepper.

Roast for 45 minutes, or until fork tender, turning several times during cooking for even browning. Taste and adjust seasonings.

Toss with toasted almonds and bacon pieces and a dab of fresh unsalted butter if desired. Serve hot.

  • 1 package chicken thighs
  • 1/4 cup extra-virgin olive oil
  • Sea salt and freshly ground pepper
  • 1 shallot, minced or ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon flat-leaf parsley leaves, chopped, reserve some for garnish
  • ½ cup white wine
  • 1 (15-ounce) can whole tomatoes, drained and hand-crushed
  • 4 cups short grain Spanish rice
  • 6 cups stock, warmed with a generous pinch of saffron thread
  • 1 dozen littleneck clams, scrubbed
  • 1 pound jumbo shrimp, peeled and de-veined
  • 1-2 pound mussels
  • 1/2 cup sweet peas, frozen and thawed
  • Lemon wedges, for serving

Heat oil in a paella or sided sauté pan over medium-high heat. Add salt and freshly ground pepper to the chicken and brown skin-side down both sides. Remove from pan and reserve.

In the same pan, make a sofrito by sautéing the shallot, garlic, and parsley. Cook for 2 or 3 minutes on a medium heat. Add the wine and cook until it reduces some, about 5 minutes, stir in the rice and stir-fry to coat the grains. Add the crushed tomatoes and stock and simmer for 10 minutes, gently moving the pan around so the rice cooks evenly and absorbs the liquid. Add chicken, clams, mussels and shrimp, tucking them into the rice. Let the paella simmer, without stirring, until the rice is al dente, for about 10 minutes. During the last 5 minutes of cooking, when the rice is filling the pan add the peas.

Remove from heat and rest for 5 minutes. Garnish with parsley and lemon wedges.

Paella for a Crowd

PAELLA FOR A CROWD

Having a houseful of people for days at a time can be tough to figure out just what to feed everyone. I love quick and easy dishes that don’t require a lot of my time or attention. Once you get all the ingredients into the pan, it’s an easy go. You don’t even need a paella pan, a regular sauté pan or even a large electric skillet works beautifully.

You’ll want to use Spanish rice and Spanish saffron if you can for the best flavor but any short grain rice will do nicely such as an Italian Arborio which can be found in your local supermarket. Sauté a little shallot, preferred, or onion, garlic and infuse some chicken or vegetable stock with the saffron to start. Choose some protein to mix into the rice such as chicken, shrimp, scallops, mussels or chorizo and the dish comes together quickly. Follow the recipe or be creative and enjoy your company for the weekend! Mangia~

Oven Roasted Tomatoes

Store these tomatoes in a jar covered with olive oil, use a lemon olive oil if desired. For a quick appetizer see below.

 

1         pound Roma tomatoes, halved lengthwise

Sea salt and freshly ground black pepper

¼       cup olive oil

1         tablespoon basil, chiffonade

1          teaspoon thyme

1         clove garlic, minced

Preheat the oven to 350∫F. Arrange the tomato halves cut side up and close together on a baking sheet. Season with salt and pepper.

In a bowl, combine olive oil, garlic, and herb. Drizzle over tomatoes and bake until the tomatoes are soft and shriveled but still retain some moisture, about one hour.

Let cool completely. Tomatoes can be stored in a glass jar, cover tomatoes with olive oil, seal and refrigerate.

For sauce: Process in a food processor and warm in a large saute pan.

 

For a quick appetizer, stuff roasted tomato halves with the following.

Mix together 1 log of goat cheese, 2 Tb. fresh chopped herbs and 1 -2 Tb. of heavy cream.

Mix until goat cheese is soft but not runny.

Spoon or pipe herbed goat cheese onto dried tomato, serve with a drizzle of aged balsamic vinegar.

Depending on where a person grew up you’ve either had experience with peppers or you didn’t, I didn’t. I just found the right book to learn about how to incorporate peppers into my dishes. “The Great Pepper Cookbook: The Ultimate Guide to Choosing and Cooking with Peppers,” from the team at Melissa’s Produce and it is filled with all kinds of great information.

Seasonally inspiring and timed just right for the upcoming summer pepper season the book offers insight into how and when to use fresh or dried peppers or how to exchange the two. One of my favorite dishes from the book are the Crab Cake Sandwiches using the flavorful Shishito pepper which is kind of new on the food scene. A sweet and mild small pepper that’s perfect to throw on the grill as a side with steak or chicken also. The book is filled with pictures and information on a large variety of peppers and if you’d like to get your hands on a copy or learn more from the Melissa Team they will be doing a demonstration and book signing this summer at Rancho los Alamitos in Long Beach. Holtz Avocado Ranch

California Avocados

I have a love affair with California avocados, ever since I was a little girl, I could never get enough. My grandmother used to feed us mashed avocado on toast with a little salt and pepper every day during the season and it is still my favorite for breakfast! Or even a little snack.

A couple of weeks ago I went to visit an avocado farm, but not just any farm, Holtz Family Avocado Farm in Escondido. Their forest of avocado trees is just so beautiful; it’s so inspiring just to walk the grove. Growing these avocados is a three-year process from budding the growth to blooming and then a year for the fruit to ripen. You can see the baby avocados, which will be ready for next years harvest, hanging on a tree right next to the avocados that are being picked for this years harvest. Avocados like to grow up in the light and when the trees get too tall it can be dangerous picking but the farm hands are experienced and work with the family year round.

The Holtz family grow mostly Hass avocados but some Reeds as well and they have a unique way of getting great avocados directly to you, they pick them at the perfect time and then ship them to you in their specially designed boxes. All avocados are hand picked and shipped the same day; the ripening comes on your end with easy step by step instructions that are enclosed in your ‘Hand Grown in California’ avocado box. Simple, easy and delicious California avocados can be ordered from their website, California Avocados Direct.

Ojai Pixie Tangerines

There is nothing as sweet and juicy as an Ojai Pixie Tangerine! Unfortunately they are in season for such a short time, you’ll find them available only until the end of April, if you’re lucky!
Sometimes Pixie tangerines can be difficult to find but you can order direct from Melissa’s Produce website (click here).

Here is a great winter salad featuring the best of the Ojai Pixie’s, enjoy during this short season.

Blue Cheese Tangerine-Apple Walnut Salad with
Dried Cranberries

Serves 4
¼ cup pomegranate vinegar
1 teaspoon Dijon mustard
3 tablespoons extra-virgin olive oil
Sea salt and pepper, to taste

1 bunch baby spinach leaves
1 apple, peeled, cored and diced into large chunks
2 tablespoons dried cranberries
2 tablespoons toasted walnuts
3 tangerines — peeled and sectioned

For the dressing:
In a small bowl, whisk together the vinegar, mustard and olive oil; season with salt and pepper to taste.

Lightly toss the spinach with enough dressing to coat leaves; place onto individual plates or a platter. Garnish with apples, cranberries, nuts and tangerine sections. Serve extra dressing on the side.

Potato and Ham Quiche

Ingredients

Crust

1 1⁄4 cups flour

1 teaspoon salt

1 stick butter, cut into pieces

2 – 3 tablespoons ice water

Filling

1⁄4 cup finely diced ham

2 -3 Yukon Gold potatoes

1 1⁄2 cup shredded cheese, such as Chedderella

4 large eggs

1 1⁄2 cups heavy cream or half and half

1 – 2 tablespoons olive oil

Salt and pepper

Preparation

Crust

Add flour and salt into the bowl of a food processor; pulse a few times to incorporate all the ingredients.

Add the butter and process until the mixture is crumbly and the butter is pea size.

Place the mixture into a wide bowl and add water 1 tablespoon at a time until the mixture comes together. Don’t overwork the dough or it will be tough, not flaky. Once the dough comes together in a ball, divide it into two pieces, flatten into disks, wrap in plastic wrap and refrigerate for 30 minutes. Preheat oven to 400° while the dough is chilling.

Dough can be wrapped well at this point and frozen for up to three months. Let the dough defrost overnight in the refrigerator before using.

Roll one chilled disk out on a floured counter or rolling mat, lifting and moving the dough every few rolls to help prevent sticking. Add only enough flour to the counter to keep the dough from sticking.

Cut a piece of parchment paper to fit the bottom of the tart pan.

Place your pan on top of the dough to make sure it is the correct size, it should be slightly larger than the pan, then roll the dough onto your rolling pin and unroll over your pan. Gently lift and lay the dough to fit the pan, never pull the dough to stretch it.

Lightly press the dough into the pan, roll your rolling pin over the top edge of the tart or pie pan and remove excess pastry. Prick the dough well with a fork.

Cut a piece of foil a little larger than the tart pan, butter the shiny side and place butter side down onto the dough. Press so the foil lays against the dough snugly, add another piece of foil if it doesn’t cover the entire crust.

Bake the crust for 20 minutes, remove beans and foil, bake another 5 minutes. Remove from oven and cool before filling. (Leave oven on).

Filling

Boil potatoes until knife tender (when a knife can slip into the potato effortlessly with a little resistance). Drain and let cool until you’re able to handle them. Slice into disks or chop into a medium dice.

Heat a medium sauté pan, add oil until it covers the bottom of the pan, add potatoes and season with a pinch of salt and grind of pepper. Sauté potatoes until lightly browned, add ham and cook for about 2 minutes or until browned. Add potato mixture to the bottom of the cooled crust. Add cheese on top of the potato mixture.

Whisk together the eggs and cream, add a little seasoning of salt and pepper, pour over potato and cheese mixture, bake for 30 minutes or until puffed and lightly browned.

Let cool before serving.

How to Make Mashed Potatoes

How to Make  Mashed Potatoes!

 russet potatoes

 (Easy Peasy)

1 medium organic* russet potato person

1 tablespoon Kosher salt

1 -2 tablespoons butter, REAL BUTTER, unsalted

1/2 cup milk (cream if you want to be decadent, or mix the two)

Sea Salt and pepper

1 tablespoon sour cream, optional

1 teaspoon chives, optional

1 tablespoon grated cheese, optional

 

Wash potatoes and then cut into large chunks, place into a large saucepan and cover with cool water. Add a tablespoon of Kosher salt, bring to a boil and cook until fork tender, about 15 minutes. 

Heat the butter with the milk (I use the microwave). If you use the microwave wait to heat until the potatoes are cooked. Drain the potatoes and peel the skin off with tongs. For creamy soft mashed potatoes slip through a ricer into the still hot saucepan that you cooked them in (without any water!) If you don’t have a ricer just put the chunks back into the pan, place on the stove over low heat for a minute or two. This helps to dry them a little further so they absorb the butter and milk more evenly.mash

 

 

Add enough butter and milk (or cream) to the potatoes and lightly mashed with a potato masher, they should come together easily. Don’t overwork the potatoes or they can turn gummy. Season with sea salt and pepper to taste and add any optional ingredients, serve.

If you’re making potatoes for a crowd they can be made about 1 hour ahead of time and kept warm on low in a preheated slow cooker! (I don’t remember where I learned that trick but thank you to whoever it was that shared it)

 

*Organic potatoes, all kinds of pesticides and sprays are used on conventional potatoes to keep bugs from eating them while they grow. Then to harvest them and finally to keep them from sprouting in the store. Choose organic for your health.
