Marinated Cucumber and Tomato Salad
- 3 medium cucumbers, peeled and sliced ¼ inch thick
- 1-2 large tomatoes, cut into wedges
- 1 medium red onion, sliced and separated into rings, optional
- ½ cup red wine or pomegranate vinegar
- ¼ cup sugar
- 1 cup water
- ¼ cup oil
- Sea salt and fresh ground pepper
Combine ingredients in a large bowl and mix well. Refrigerate at least 2 hours before serving so the flavors have a chance to blend.
